A wine enthusiast at an early age, Andy Au of Intercontinental Hong Kong Yan Toh Heen Chinese Restaurant is the go-to guy for wine-pairing with Chinese cuisine. He has not changed a single bit after all these years and still enjoys organising wine-tasting dinners for friends and family.

1. What do you love the most about your job?

I enjoy the exploratory nature of my job. I get to scout and taste wines (and occassionally the food that pairs with it) from all over the world EVERY DAY!!! It is almost like traveling to a different country every day - what more can i ask for?

2. What is your most memorable wine & why?

1990 Krug Clos du Mesnil, Champagne, France. It has a seductive mosaic of biscuit, honey and walnut oil followed by hints of baking bread and citrus on the palate, and ends with a long finish.

3. Any obscure grape varietals caught your attention lately?

Colombard. It is a full-bodied style grape which is rich and with high natural acidity.
