William Chan of The Mira Hong Kong Cuisine Cuisine has won a string of sommelier competitions and represented Hong Kong in the World's Best Sommelier Competition in Greece in 2004. Even with such success, he is still a kid at heart – always searching for a hidden-gem, the next up-and-coming wine.

1. What is your most memorable wine & why?

Chateau Cheval Blanc 1961, tasted in 2001. For a 40-year plus wine, the wine was surprisingly tight and healthy (and after taking 4-6 hours to open up)!

2. When you walk into a wine bar, how do you choose what you are going to drink?

I would first go through the wine list and try any wine of a rare grape or from a less-known vineyard. After that, I would rely on the sommelier or the manager for recommendation.

3. Any obscure grape varietals caught your attention lately?

Touriga Nacional and Touriga Franca from Portugal. These are typical Port wine grapes but can be made into fruit driven, intense, yet elegant red wines.
