Having previous worked as a supplier and a educator, and now a sommelier of Grand Lisboa Hotel Restaurant Don Alfonso and The Kitchen, Henry Chang knows it all, from sourcing, training and to making tricky food-pairing recommendations for his guests.

1. What do you love the most about your job?

The opportunity to taste wines (famous and boutique) from all over the world, and to learn from other fellow sommeliers.

2. What is your most memorable wine & why?

1997 Emmanuel Rouget Cros Parantoux, Vosne-Romanee, France. I love the wines made by Mr. Henri Jayer, widely considered to be an innovator and pioneer in the industry.

3. Any obscure grape varietals caught your attention lately?

Carricante, Grecanico Dorato and Coda di Volpe from Sicily
