Alan Liu first learned about wine from a frequent customer during his bartender days and immediately fell in love with it. With hardwork and determination, he has come a long way and is now the head sommelier and bar manager of American Club in Hong Kong.

1. What do you love the most about your job?

The challenge in food pairing. There is no golden rule when it comes to pairing wine with food. Each wine is unique on its own and exhibits different characteristics when paired with different dishes. I get satisfaction when I am able to come up with a good pairing that enhances both the wine and the dish.

2. What is your most memorable wine & why?

Grand Merlot by Mr. James Irvine in South Australia. You may know that this Grand Merlot is also known as 'King of Merlot'.

3. When you walk into a wine bar, how do you choose what you are going to drink?

I always look for something new when I visit a wine bar. I would normally order a tasting portion of something special (i.e. something I never tried before) in the first round; and for the second round, I would rely on the staff's recommendation.
